Baked salmon with potatoes and zucchini

I have been eating a lot of salmon recently, and decided to try to spice up the recipe a bit. I was quite happy with what I got:

Salmon with potatoes and zucchini

Here’s what you’ll need:

500 gr of potatoes
salmon fillet
1 medium sized zucchini
1 small-medium onion
1 lemon
spices, capers

Wash and peel the potatoes, and place them in a pot with cold water. Let them boil for 10-15 minutes, until they are somewhat cooked, but still hard.

In the meantime, bake the salmon in the oven. I use frozen salmon, so i defrost it first – you can place the whole package in water, or simply use the defrost function on the microwave to do so. I rub some olive oil, salt and spices on it, and allow a few minutes for it to marinate. Heat up the oven to 180 degrees, place some baking paper and add the salmon pieces. Should take about 15-20 minutes to cook.

Once the potatoes have cooked, take them out and cut them into round pieces. Then take an oven dish and wipe it with some olive oil. Peel the zucchini and cut it into thick slices. Cut the onion as well, and mix all these ingredients into the oven dish. Spice it up as you wish – i only used salt, pepper and some oregano. Put the dish in the oven, and leave it there until the zucchini is cooked – shouldn’t take longer than 20 minutes.

Cut the lemon, leaving the peel on. Once the dish in the oven is almost ready, cut the salmon into pieces and mix it inside. Add the lemon slices and allow the dish to bake a couple of minutes longer. The lemon will give the dish a nice, lemony taste. You can also add a few capers when serving.
