Tomato Soup Simplicity

5 minutes preparation, 10 minutes cooking, 20 minutes waiting for it to plump up.

 

In those moments when you just want a lite and refreshing coup of soup – tomato soup does the trick, and does it very well. This recipe is intended for 2-3 people. You can scale it down of course but then how will you do repetitions, or an evening snack.

Ingredients:

  • A litter of pre-boiled water
  • Two spring onions
  • 30 g of quinoa
  • Half a jar of precooked lentils (150-200 g)
  • 200 g of tomatos (cherry, roma, ordinary)
  • Spices of your choice (no rules)
  • 1 or 2 tablespoons of olive oil

Preparation: Just drop everything in the pre-boiled water. Cook for 10 minutes. Take it off the stove, cover it and let it cook by its own heat for another 10-20 minutes, depending how plump you want your quinoa. Eat it clean as a one course meal or use it as a simple entree to your 3 course meal. Eat cold or hot, spicy or not. Versatile tomato soup will not blow your mind but you can bet that it won’t disappoint you either.
