In those moments when you just want a lite and refreshing coup of soup – tomato soup does the trick, and does it very well. This recipe is intended for 2-3 people. You can scale it down of course but then how will you do repetitions, or an evening snack.
- A litter of pre-boiled water
- Two spring onions
- 30 g of quinoa
- Half a jar of precooked lentils (150-200 g)
- 200 g of tomatos (cherry, roma, ordinary)
- Spices of your choice (no rules)
- 1 or 2 tablespoons of olive oil
Preparation: Just drop everything in the pre-boiled water. Cook for 10 minutes. Take it off the stove, cover it and let it cook by its own heat for another 10-20 minutes, depending how plump you want your quinoa. Eat it clean as a one course meal or use it as a simple entree to your 3 course meal. Eat cold or hot, spicy or not. Versatile tomato soup will not blow your mind but you can bet that it won’t disappoint you either.
Make food to enjoy it, not to fulfill a task.
